My thanksgiving secret...
My mother in law is a fantastic cook. The best recipes I've ever gotten from her have been the ones that have eight ingredients or less, and my thanksgiving secret is no different. I call it MY secret because a few years ago, my husband and I took over the 'burden' of the Family Thanksgiving Dinner and decided to include everyone's in-laws, therefore turning it into a 40-person affair.
The dinners are always fun, entertaining and delicious, but My SECRET is the one thing that everyone talks about year after year. Today, I'm sharing MY secret with YOU! The Cranberry Raspberry Relish. Forget all those canned cranberries and go for the REAL, FRESH (not frozen) thing!!
The Cranberry Raspberry Relish
It is best if made ahead of time to allow the flavors to mingle. May be refrigerated, covered, for up to a month.
- 1lb. Fresh Cranberries (not frozen)
- 2 Tart Green Apples - cored
- 10oz. Package frozen raspberries - thawed and drained
- 1/2 C. Orange marmalade
- 1tsp. Lemon Juice (or more - to taste)
- 1/2 C. Agave
It is best if made ahead of time to allow the flavors to mingle. May be refrigerated, covered, for up to a month.
Adjust the agave and lemon to taste before serving. Go ahead and claim ALL the credit!
